Caramel Ginger Crunchies

         Once I found these Caramel Ginger Crunchies in the cookbook called Cookies by Pamela Clark, (pg. 80), I knew I had to try them! They were really fun to make and so so delicious! I usually don't like ginger cookies but I love caramel and those two ingrediants were perfect together. It was sweet but with alittle bit of a bite from the ginger and they certainly were chewy! I loved them and so did my family and friends so I hope you like them too! :)

So here's what you'll need:
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
2 teaspoons of ground ginger
1 cup sugar
1 stick cold butter, chopped
1 egg
1 teaspoon honey
3 tablespoons finely chopped candied ginger
45 wrapped hard candies

Here's how you make them:


First, preheat your oven to 325 degrees farenheit. Second, Grease your cooking sheets and cover with parchment paper. Third, sift dry ingrediants together and process with butter until mixture is crumbly. Then add the egg, honey, and ginger; process again until all of the ingrediants come together. Fourth, knead the dough on a floured surface until smooth.


Fifth, roll rounded teaspoons of cookie mixture into balls and flatten slightly. Place the cookie balls about 11/4 inches apart on baking sheets. Sixth, bake cookies for about 13 minutes.



 Place a caramel on top of each hot cookie and bake for another 7 minutes or until caramel begins to melt. When the caramel becomes soft, smooth it over the cookie. Be careful not to burn your fingers in the process! The cookies will be hot!





Cool the cookies on a cookie sheet and enjoy! :)

Hello Everyone! Welcome to my new blog! I love cooking, it's my passion as well as photography so with these two things I decided to create a blog! I have been cooking all my life. I have always wanted to grow up to be a chef and I am working my way there! Cooking is so fun because you have the chance to make something wonderful out of very little. The creative possibilities to it are endless! It just fascinates me how much there is to cooking. My cooking experience started with watching Food Network and from there I would play with plastic food along with pretending I was cooking while washing dishes. I was so excited when I was finally old enough to cook my own food and now I am enjoying creating my own dishes and trying to put my own little twist on recipes that have already been created. It's so fun to experiement even though sometimes it doesn't turn out good! Ever since I can remember I always pretended like I was on a cooking show, which was so so fun at the time. Even now once in a while, without realizing it, I would catch myself explaining in my head how I would prepare the food I was cooking. Funny thing is,  now that I'm older, I never want to be on a cooking show. I actually dread the thought of it. I would much rather own my own little eclectic bistro in Colorado or something. I love the look and feel of the cafe, bistro style.It feels like a coffee shop, which I absolutely adore. I think my food style would be simple but with a fancy twist (and lots of flavor!!). But who knows, I'm only 16. :) Well I can go on and on so I'm going to stop there but if you try the recipes that I will be posting I hope that you will enjoy them and maybe you can add your own twist to them and share with me what you did and how it turned out! :)
